What is honey?

mehilaisiaHoney is a natural product, which is produced by the bees from the nectar they collect from plants. Honey is a pure product, where nothing is added or taken away from it. Nectar and honeydew is the tissue fluid of the plants and it includes sugars, water and many minerals. The bees extract their gland secretion, saliva liquid and enzymes to the nectar. Invertase enzyme breaks the cane sugar into glucose and fructose. This transformation leads to a higher sugar content in the nectar. This enables the bees to produce a stronger sugar solution, that has only about 18% of water in it.

The consistency of the honey is affected by all the plants visited by the bees have visited to collect nectar and pollen. Honey comes in dark and light varieties; crystal structure varies a lot and the palette of tastes is vast. Even in the same beehive in the same place you can experience totally different honeys every year based on the rhythm of blooming and the timing of the bees to be able to collect the honey due to a favourable flying weather.

Consistency of the honey

Honey is never the same, so the colour, consistency, taste and smell can vary a lot depending on the origin flowers of the nectar. Honey that has a higher natural fructose levels is runnier, when the honey types with more glucose tend to stay more solid. Every honey person has their own favourite; some think that the light, spread-like honey is the right one, when the others prefer the runny types. Honey is in both cases always real honey, when nothing is taken away from it and nothing is added to it.

The Finnish honey business benefits from the clean and undisturbed nature, professional beekeepers and the high quality of the production equipment. The intense, bright summers enable the production of unique honey types even with the relatively short harvesting season. The northern nature has ensured, that most of the different types of flowers are blooming at different times. That is why in Finland it is easier to produce clean types of honey than it is in central and southern Europe. The nature in Finland has a lot of variety and the differences also give their flavour to the honey. The most important honey producing plants in Finland are fireweed, raspberry, white clover, canola, dandelion, blueberry, lingonberry, heather, cloudberry, linden and other garden plants and harvested plants like honey flower, buckwheat and mustard.
